The end result is a flour suitable for all types of baked goods such as bread, biscuits, pizza, cookies, muffins. You can use 100% for denser cakes, or softer breads. It can also be combined with other types of flour such as durum or whole wheat flour.
Flour that is freshly milled or ‘green’ does not make doughs and bread with proper rheology and texture. So, there’s the need for aging or bleaching.
This step is beneficial in terms of:
- Oxidizing the sulfhydry groups of the protein, thus improving dough elasticity
- Whitening the flour
- Improving the baking characteristics
Whole Wheat Flour Vs. All Purpose Flour
Whole wheat flour is made by grinding the entire wheat kernel. A kernel of wheat contains the bran, the germ, and the endosperm. The wheat bran is the hard outer shell of the wheat kernel that is packed with fiber and nutrients. The germ is the nutrient-packed middle of the kernel, which is used for reproduction. The endosperm is made of starch and makes up most of the inside of the wheat kernel.
White flour, or all-purpose flour, removes the bran and germ in its production process and is made from just the endosperm. The removal of the bran and germ gives AP flour a fluffy, smooth texture. Since whole wheat flour is made from the entire wheat kernel, it is denser and darker in color than white flour.
Today, we can’t get enough of nutty, whole-wheat flour. we use it in breads and cookies and crusts for an extra depth of flavor and bite. Baking with whole wheat just requires a little more thought than using plain ol’ all-purpose. Whole-wheat flour is partly or entirely milled from whole or almost-whole wheat grains (not to be confused with whole grain, which can be made of any whole-grain kernel) and can make baked goods very dense. But instead of shying away from what you don’t understand , experiment with robust recipes that can handle the extra weight.
